My best eats from the July 626 Night Market all come from La Sriracha Racha. 
Spicy Frog Leg Fries. I have to hand it to La Sriracha Racha for consistently being the most exciting booth at every 626 Night Market. They always take it up a notch. Frog legs, fries, and an egg. It's amazing. I promise you. Go get some now! 
Mako Shark Tacos. La Sriracha Macha has done shark tacos before, but they never tasted like this. These tacos will melt in your mouth and have you asking for more! Also, don't forget to pick up their Maple Bacon Cotton Candy. Seriously... bravo, bravo! 
Also, spend $12 and get their hot sauce for free. 
Best drink goes to Fruitology's Pineapple Passionfruit Limeade with Chia Seeds. The bottle also has a light up tab on the bottom so you're drink will light up the night if you're into that sort of thing. The night market has a big fad with drink booths doing mason jars with glow in the dark light up cubes.
